If you’re anything like me these days, I’m all about coffee in all forms! Hello quarantine and homeschooling. With the temperatures climbing, I thought it would be fun to create these simple and creamy iced coffee popsicles. I love to use silicone molds because they make it super easy to pop the popsicles out! Enjoy!
Iced Coffee Popsicles
- 3/4 cup heavy whipping cream
- 3/4 cup unsweetened almond milk
- 1/4 tsp liquid stevia (more or less to taste)
- 1/4 tsp vanilla extract
- 2 tsp instant espresso powder

Combine cream and almond milk in a large microwave safe liquid measuring cup or mug and microwave for 1 and a half minutes. Almond milk should be hot, but not boiling.

Add in stevia, vanilla, and espresso powder and gently mix everything together.

Pour mixture into 4 popsicles molds, following manufacturers instructions. Freeze for at least 3 hours.
