I like making Dutch babies over (conventional) pancakes because they contain more protein and fat. Plus they have interesting undulations! Even little Thomas will eat a one-quarter slice, which is 240 calories, only 10 g carb, 16 g fat, and 18 g protein! That's a winner of a breakfast and he thinks he got to eat "only bread."
Today I baked cookies for the week and am attempting to label and freeze them to fend off the ravaging hoards. I want homemade cookies for Sunday night dessert (with ice cream) and to pack for brown bag lunches for our homeschool co-ops on Wednesday and Friday. These cookies are simply "nice" for my other kids, but for Thomas, one cookie sneaks in a whopping 328 calories and 21 g carbs, which would normally be too much, but he can tolerate because of the 18 g fat and 6 g protein paired with it.
